Especially on a cold day and you are sick with a miserable cold. Thank you hot soup for soothing the sore throat, clearing the sinus for a bit and making my tummy feel warm. You really hit the spot. The 1.5 hour nap I took with Peanut didn’t hurt either. Now if only something would make my poor abused nose feel better.
Prep Time: 15 mins Cook Time: 20 mins
1 tablespoon olive oil
1/2 cup diced sweet onion
2 celery stalk, sliced
1 can (28 oz) petite diced tomatoes
2 carrots, halved length wise and sliced
4 cans or 8 cups of good vegetable broth or stock (or chicken)
3 sprigs of fresh thyme
1 can red kidney beans rinsed and drained
1 cup small pasta (optionally, 3 or 4 small potatoes, diced)
1 zucchini, diced
salt and pepper to taste
Heat olive oil in a large pot. Sautè celery and onion a few minutes until they start looking translucent. Add the diced tomato and sautè until the tomato starts bubbling and breaking down. Add the carrots and sautè another minute.
Pour in the broth and add the thyme. Bring to boil and remove the thyme. Add the beans and pasta. 2 minutes before pasta is tender, add the zucchini.
Salt and pepper to taste (I find that canned stock and canned beans already provide enough salt)
Serve with crusty chewy bread like sourdough or any good artisan bread.
