Lenten Meal Ideas and Recipes

Yikes!  The Lent season is upon us.  Is it me or did it kind of sneak up on us this year?

I’ve already written weekly Lent menu a few years ago so I’ll just list some vegetarian and seafood recipes from the past.

Beans are great meat substitute!

Chana Masala
Chana and Potato Masala
Masoor Dal
Black Beans
Cuban-style Beans

Tofu’s always a great option in my family. Or other Korean food.

Fried Tofu
Bok Choy and Tofu Stir-fry
Bibimbap
Jap chae
Saengsun jun (pan-fried fish)

Salads with alternate proteins.

Tuna Pasta Salad
Peruvian Quinoa Salad

Pasta dishes with alternate proteins or no protein at all.

Lemon Ginger Noodle with Shrimp and Mushrooms
Mac and Cheese
Mac and Cheese (with bread crumbs)
Mushroom Risotto
Penne with Shrimp in Herbed  Cream Sauce
Tuna Casserole

Soups are great way, too with a side of salad.

Roasted Cauliflower Soup

Of course, the obvious no-meat option, seafood.
