Yup, I’m thanking cauliflower today. It’s sad, but I really had nothing else.
Today was another left-over day, but with no left-over vegetables as a side. I cut a whole head of cauliflower, sprinkled some olive oil and sea salt and roasted it for 30 minutes. Even Peanut enjoyed it and the four of us polished off the whole head in minutes.
Roasting vegetables is so much tastier than boiling or steaming. I can’t believe I only discovered it last year. Roasting brings out a whole new taste and adds complexity to the vegetable. If you have never roasted broccoli or cauliflower before, go do it. You won’t regret it.
