What’s For Dinner 2.9 and 2.10

So easy to fall off the blogging wagon…

I think most home cooks can relate with the struggle to come up with weekly dinner menus. So, I’m going to set some predictable parameters in the hopes of making it easy on me.

Meatless Mondays, Tacos or some form of latin/Mexican based Tuesdays, Left-over Wednesdays and Fish or Seafood on Fridays.  Let’s see how it goes.

Week 2.9

S – balsamic chicken, mashed potatoes, roasted asparagus
M – mac and cheese, oven baked Italian style meatballs, sauteed spinach
T – chicken flautas, yellow rice, veg
W – LO
T – tofu and kale miso soup, rice, edamame
F – breaded flounder, pasta, veg
S – pizza

Week 2.10

S – bulgogi and tofu stew, bok choy, steamed rice
M – pan-fried tofu, pa-jun and assorted banchan with steamed rice
T – LO
W – lentil Soup, bread, salad
T – veggie burgers, sweet potatoes, asparagus
F – shrimp and pasta
S – pizza
